Wholesome and Hearty Breakfast Casserole
Best breakfast casserole ever
Not only easy (about 15 minutes to prep), but healthy and so amazingly delicious.
Company good or batch make it for an easy breakfast entree for this busy weekdays!
Ingredients:
- 2 tablespoons extra-virgin olive oil
- 2 red bell pepper
- Green onions (scallions) thinly sliced
- 5 ounces chopped spinach
- 12 eggs
- 3 tablespoons of greek yogurt or milk (full fat)
- Frank’s hot sauce
- 1/2 teaspoon salt
- fresh ground pepper
- 1/2 cup feta or goat cheese
Directions:
- Preheat oven to 350 degrees. Grease 9 X13 pan.
- In large skillet, warm olive oil (medium heat). Add bell pepper+onion. Cook till tender
- Add spinach until wilted. About 2 minutes. Set pan aside.
- Crack eggs into medium bowl. Add yogurt/milk, hot sauce (how much is your choice)+S/P.
- Whisk until whites and yolks are blended. Stir in 1/4 cup of cheese.
- Add veggies to eggs in bowl and stir to combine. Pour into pan. Sprinkle 1/4 cup cheese on top.
- Bake for 30 minutes minimum. It can take 45 minutes plus. Eggs should be puffy and cooked. Insert fork to make sure it comes out clean so the casserole is cooked.
The original recipe was found on Cookie and Kate. Love this one and make it often because I love it and so do guests. Serve with a side of greens and a fruit tray. Enjoy!
