White Bean, Spinach, Orzo, Sun-Dried Tomato with Lemon and Feta
Delicious, Nutritious and Amazing!
- Ingredients:
- 1 1/2 T extra-virgin olive oil
- 1 cup chopped red onion
- 6 garlic cloves minced
- 1 cup whole wheat orzo
- 1 cup chopped son-dried tomatoes
- 3 cups veggie brith
- 2 cans (15 oz)cannellini beans-drained and rinsed
- 2 teaspoon lemon zest
- 3 T lemon juice
- 1 teaspoon salt
- 1 teaspoon oregano
- 1 5 oz package baby spinach
- 1/4 cup feta cheese-crumbled
- 1/4 cup fresh basil (if desired)
- 1/4 toasted nuts- pines, walnuts, etc your choice
Step 1: Heat oil in a large skillet/pan over medium heat. Add onions and cook for about 8 minutes until translucent. Stir in garlic, cook stirring often for about 1 minute.
Step 2: Stir in orzo and sun-dried tomatoes; cook, stirring often until orzo is toasted about 1 minute. Add broth, beans. lemon juice, salt and oregano and bring to boil over medium-high heat. Reduce heat to medium-low, cover, and simmer for about 15 minutes until orzo is done/
Step 3: Stir in spinach. Cook, uncovered stirring often until spinach is wilted. Remove from heat and top with favorite toppings- feta, lemon zest, basil, nuts or others. ENJOY!
