Brussel Sprouts and Tofu- An Easy and Healthy Lunch
When you do your weekly food shopping this week make sure and pick up some organic Brussel Sprouts and organic Tofu to make this yummy dish.
Cut the stems off the brussel sprouts (about 2 cups) and toss them in the food processor to chop in smaller pieces.
Heat the skillet and spray with olive oil. Add a minced clove of garlic and Brussel sprouts to pan.
Saute for about 8 minutes or until the sprouts are a bright green. Add some tofu (1 cup) cut up into little chunks in the pan. Cook for about 5 more minutes, adding several squeezes from lemon slices. Toss in about 8 walnuts and season to taste.
Lots of protein, fiber, and flavor in this light, yet filling lunch.
