Best Black Bean Burgers
Eat Well Buffalo has tried many different Black Bean Burger recipes and we never quite found one that was perfect. Our search is over. This recipe is pretty easy with 10 simple ingredients and takes a total of twenty minutes to prepare. We placed it on a whole wheat bun and added avocado, pickle (dill, of course), and tomato. Paired it with fresh home grown (thanks to Ginny Callahan) green beans sautéed in olive oil, garlic and onion with a little red pepper flakes added. Added a healthy coleslaw like side dish and we were extremely pleased.
Ingredients:
- 1/4 cup grated onion
- 1 piece whole grain bread toasted and torn into pieces.
- 1 tablespoon chopped garlic
- 1.5 teaspoons fresh lime juice + 1/2 teaspoon grated lime rind
- 3/4 teaspoon ground cumin
- 3/4 teaspoon coarse salt
- 15 ounce can black beans rinsed and drained
- 1/3 cup coarsely chopped walnuts
- 1/2 teaspoon hot sauce
- 1 egg lightly beaten
Directions:
- Place toasted bread in food processor and pulse around 5 times. Transfer to bowl.
- Combine onion, garlic, lime juice +rind, cumin, salt and beans in processor and pulse 5 times.
- Add bean mixture, walnuts, hot sauce and eggs to combine; stir well.
- Divide mixture into 4 equal portions and shape into 3/4 inch thick patty.
- Heat olive oil (3-4 teaspoons) into non stick skillet over medium high heat. Add patties to pan and reduce heat to medium. Cook about 4-5 minutes on each side or until browned
