Healthy Zucchini Walnut Muffins
Delicious, healthy and nutritious these muffins are really easy to make. Most of the ingredients, if not all, will be stocked in your pantry. Make sure and bake extras to freeze or share!
Ingredients
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1/4 cup ground flax, chia and hemp seeds use your favorite seeds to total about 1/4 cup
- 1 T cinnamon
- 1 T baking powder
- 1 apple-chopped or
- 3 eggs (we use 2 egg whites and 1 egg
- 1 t vanilla
- 3 small zucchini grated
- 2 ripe bananas- mashed
- 1/2 cup chopped walnuts (or your nut of choice)
- optional 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 375 degrees
- Put flour, oats, seeds, cinnamon, salt, baking powder into food processor and blend until well mixed
- Add apple, eggs, vanilla, zucchini, bananas, nuts and chips (if preferred) to food processor and blend
- Spray muffin tins with non stick spray and fill about 2/3 high. Makes about 16-18 muffins.
- Add one large walnut/nut to top of each muffin.
- Bake at 375 degrees for about 15-20 minutes.
- Let cool and enjoy with green tea or coffee.

Made these muffins today and they are wonderful. I added dried cranberries and lots more walnuts. Very nutritious !!!!!
