The Mighty Mango Muffin vs. The Hoho Making Smart Food Decisions

EAT WELL BUFFALO RECIPE
Mighty Mango Muffins
Ingredients and Directions:
STEP 1: Put these 6 ingredients in a food processor/blender and puree.
2 ripe bananas
1 mango (3/4 to cut and use in this batter and 1/4 to chop and save to sprinkle on top)
1/4 cup greek plain yogurt
1/4 cup olive oil
2 tablespoons honey (optional)
1 egg (or egg white)
STEP 2: In a larger bowl, add these items and whisk together:
1 1/2 cups white whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
Sprinkle of salt.
2 tablespoons chia seed
2 tablespoons flax seed
STEP 3: Add blended puree to dry ingredients. Fold in 1/2 cup chopped walnuts too! You can also add chopped apple, raisins, other nuts or seeds here.
STEP 4: Makes about 10 muffins. Spray/paper muffin tins and spoon batter. Top each muffin with chopped mango and chopped nuts (walnuts). Bake at 425 degrees for 10 minute. Turn down heat to 375 degrees and bake for another 15 minutes. Cool in pan before removing
