Delicious and healthy Antioxidant Bark
When we talk about eating healthy and preventing disease, antioxidants are a common topic. Our bodies produce free radicals that can damage ourselves in many ways. Antioxidants can help by neutralizing and actually removing these free radicals. Therefore, by eating foods that contain high levels of antioxidants, we can help protect ourselves from disease.
Here is an awesome recipe that is full of antioxidants as well as absolutely delicious. Here is the basic recipe, but you can certainly alter it based upon what ingredients you have on hand and what is your taste preference.
3 T. hemp seeds
3 T. chia seeds
3 T. sunflower seeds
1 cup of chopped nuts (I love walnuts)
1/3 cup dried blueberries or gogi berries
1 1/2 t. vanilla
Himalayan/Sea Salt
12 ounces of (70% or more cacao) dark chocolate
Very simply, I roast the nuts and seeds together for about 5 minutes at 400 degrees. Melt the chocolate on low in a sauce pan (you can use a double broiler). Mix all the ingredients together (except the salt). Spread in a baking pan or shallow pan and sprinkle with sea salt.
Place in freezer or refrigerator for 30 minutes. Break into pieces and store in freezer or refrigerator.
Enjoy a small piece (about one ounce) every night with a glass of red wine or cup of green tea. You might want to share with friends or family, but be sure to make a double batch because I guarantee you there won’t be enough. Enjoy!
